Use of raw eggs
According to the NSW Food Authority, the use of raw eggs has been associated with some of the largest foodborne illness outbreaks in NSW. Raw eggs are used in food such as mayonnaise, aioli, hollandaise, egg butter, cheesecake, tiramisu, mousse, custard, fried ice-cream, eggnog and others.
The NSW Food Authority has provided factsheets and guideline to help food business owners to prepare these high risk foods safely. For more information, visit the NSW Food Authority.
